The banquet event order

The one document the kitchen, the floor and the client all work from — the menu, the timings, the setup, the equipment, the numbers — printed from the booking.

The BEO is the event on paper: the venue and the timings, the setup — theatre, classroom, rounds of ten — the menu course by course, the bar, the equipment, the guarantee and the expected number, the client's contact and the hotel's, and the special instructions everybody signs off on.

From the booking

It is printed from the event booking, so a change to the menu or the numbers is one change, and the BEO the kitchen holds on the day is the version that was last printed — with the print time on it.

After the event

The actual attendance is recorded; the bill follows the guarantee or the actual, whichever is more; and the event's own ledger reads the costs against it.
